Inspiration always hits me in funny ways, but once it does I can’t seem to push it out of my head until I try something for myself. I used to be a huge avocado fan; I could eat guacamole for breakfast, lunch & dinner (okay maybe just lunch and dinner but still…), then that terrible thing happened. I’m not sure if there’s a name for it but lets just call it the “curse of gluttony.” It’s that moment when suddenly the one thing you love most just doesn’t taste good anymore because you’ve gotten your taste buds so used to it they no longer recognize it’s amazing qualities. The same thing happens with music or t.v. shows – how do I know this? Because I’m officially at a point where I cannot watch some Friends episodes… I didn’t think that day would ever come.
Anyway, yesterday I was scrolling through my instagram feed when I saw a breakfast post from Beth Kirby featuring an avocado smash on fresh bread. My mouth start watering and that’s all I could think about until my trip to the grocery store last night. While I had a ton of recipes to try when I get home, which means more posts to come, I started with this one because I couldn’t wait to try it. She briefly describes what her husband did to make their smash special on her instagram post, but I added a few variations to mine because a). I don’t have homemade garlic oil & b). there was no bakery open around me at 8:30 p.m. when I started my cooking frenzy.
What you’ll need?
1 small avocado (as dark as it can be without it being black – this will ensure the skin to peel off easily when you slice into it)
1 teaspoon of crushed garlic
1/4 teaspoon of lemon juice
1/2 teaspoon of crushed red pepper
1/4 teaspoon of honey
1 teaspoon of Olive Oil
What to do?
This will probably be the easiest recipe you’ve ever made and it tastes and looks so complicated. There aren’t any fancy steps and I won’t try to trick you into thinking I did more than just combining the ingredients above into a mixing bowl and smashing away with a whisk (hence the recipe title).
I toasted some honey wheat pita that I brushed with a garlic and olive oil mixture and spread the avocado amazingness on top.
This is a perfect healthy addition to any breakfast or lunch, or great by itself as a midday snack!
