A Surprise Inside 

I think that baking something for someone is the best way to say “congratulations,” “I care,” or just a “happy Sunday night!” There is something about a homemade treat that says you care enough to take the time and make something for them, but it also something that’s pretty easy to find a place for.

I’ve always been a lover of homemade gifts and I think that homemade food is probably the best kind!

These delicious cupcakes were super easy to make and while time consuming, came out better than I could have ever imagined.

Flavor choices are totally optional and bare no relevance to the outcome. You can choose any flavors, any filling and just roll with it!

What you’ll need? 

1 box of cake mix (I did classic yellow)

1 container of frosting (I did milk chocolate)

1 bag of mini candy (I chose mini M&M’s)

Items to decorate

To enhance chocolate frosting? 

1 tablespoon of coconut oil

1 cup of semi-sweet mini chocolate chips (melted)

1/2 cup to 1 cup of milk (add while whisking)

IMG_6974How to make it all come together into perfect joy-filled packages of delicious? 

Prepare the cake mix as described on the box, usually 3 eggs, 1/2 cup of Canola oil and 1 cup of water

I baked mine in a cupcake pan without wrappers, so make sure it’s greased really well, for 25 minutes

When they come out of the oven, let them cool completely

Cut the cupcake in half, like you’re making a muffin top

Cut a shallow hole out of the bottom half and fill it with your candy

Take your decorating icing and line the outer rim before putting the two halves back together

At this point your icing should be prepared, you can use it as is, but those additions above will make it social media worthy & ice the cupcake in whatever way you’d like (for a more homemade feel, I did not use a piping bag)

Decorate however you see fit, I chose Betty Crocker decorating icing and nonpareils, but you can do whatever makes your heart happy

These may be the best dessert I’ve made in a long time, which is saying something because I make dessert at least once a week.

A helpful side note: After fully decorating the cupcakes, place them in the fridge for at least an hour before eating, after that they are safe to be unrefrigerated for less than 72 hours. Setting them in the fridge will allow the candy to solidify a bit inside so people don’t take a bite and get a real surprise when the candy spills all over the floor!
